The best thing about fall is curling up with a good book, a cup of coffee, and a fresh-baked treat. My family loves chocolate (in case you couldn't tell). So, it only makes sense to make a chocolate treat to warm the day. One of the treats we enjoy is Vanilla Chocolate Chip Bread. It's a really easy recipe that is ready in a short amount of time.
You can make it as bread or as muffins. It's all up to you. Let's get to the recipe!
Vanilla Chocolate Chip Bread
1/2 cup sugar
1/2 cup brown sugar
1/2 cup unsalted butter, softened
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup buttermilk
1 tablespoon vanilla extract
3/4 cup mini chocolate chips
- Preheat oven to 350 degrees. (400 degrees for muffins)
- Grease bread pan or muffin pans (only grease bottoms only of muffin pan). In a small bowl, combine flour, baking soda, baking powder, and salt. Set aside.
- Using a hand mixer, combine sugar, brown sugar, and butter until nice and creamy. Add egg and blend. Add buttermilk and vanilla, mix until combined (don't overmix). Finish off by adding the flour mixture. Add chocolate chips, be cautious you don't overmix.
- Bake for 35-45 minutes or until a toothpick inserted in the center of the bread comes out clean. If you make these as muffins, you will only need to bake them for 18-20 minutes or until golden brown and toothpick inserted in center comes out clean.
- Let cool in pan for 10 minutes. Remove from pan and place on wire cooling rack.
- NOTE: If you want to mix it up a bit, you can add half of a mashed banana to the mix or even some pumpkin.
There you have it. An easy bread or muffin mix you can whip up in about an hour. This would be great for an after-school snack or for a cozy fall weekend.
